Everything is better with bacon, and this green bean dish is no exception. After the bacon is cooked, the onions are sautéed in the bacon drippings and the green beans are then tossed with the onions and bacon.

Ingredients

½ pound bacon
2 pounds green beans
2 medium onions, coarsely chopped
1 teaspoon salt
½ teaspoon pepper

Cooking Instructions
Heat oven to 350 degrees F. Lay bacon slices flat on jelly roll pan. Cook, turning once, 20 minutes, or until crisp. Remove bacon to paper towels to drain and cool; coarsely chop. Reserve 2 tablespoons of bacon drippings.
Cook green beans in boiling, salted water about 7 minutes or until crisp-tender. Drain and reserve.
In large skillet over medium high heat, melt bacon drippings. Add onions and cook, stirring occasionally, 5-7 minutes, or until lightly browned.
In large bowl toss bacon, green beans, onions, salt and pepper to mix.

Growing Green Beans - Tips on How to Grow These Tasty Greens

Green Beans have a lot of names, whether they're called string beans, green beans or snap beans, they are one of a farmer's favorite and most productive garden plants. They're also versatile, edible both cooked and fresh from the garden.

To find success with your green beans, plant them in warm soil (above 65 degrees F). They like sun, so plant them somewhere they'll see at least six hours of it a day. You can even grow them in a container in your window.

Green bean seeds will be ready between 50-70 days from the time you plant them, so think ahead if you want to enjoy them all summer. Stagger planting by a couple of weeks to guarantee you'll have tasty green beans for your salads and casseroles all season long.

While heavy on salt and kind of high in calories, bacon has no trans fat at all. Several slices of bacon are healthier in terms of calories, salt, fat and cholesterol than a hot dog, hamburger or glazed donut.
Bulging Budgets

Beef Potato Veggie Roll

2 medium potatoes (cut into 1-inch pieces)Beef Potato Spinich Roll
1/8 C. Milk
1 TBS Margarine
1/4th C. Water
½ can diced tomatoes
1 lb. Ground beef
salt and pepper to taste

Put potatoes in sauce pan and cover with water. until they are fork tender. Drain.

Add milk, margarine, salt and pepper, then mash potatoes until smooth, set aside.

1 egg
1/8 C. Bread crumbs (seasoned)
1/8 C. grated Parmesan cheese
½ garlic bulb or dried granules
½ pack frozen spinach

Heat oven to 325 F.
Chop tomatoes and juice with knife and fork.
In bowl mix beef, bread crumbs, egg, salt, and pepper. Mix thoroughly.

On a rectangular pan, pat out hamburger mixture, then cover with layer of potatoes, add top layer of spinach.
Press it all slightly to make firm, roll up into ‘Jelly Roll’ shape, top with tomatoes.

Bake 50 minutes. - Serves 4
